Chicken ala Kyums ( Chicken and Tofu with Celery and Onion leaves)

 Another recipe I get to collect and cook. This one's a special menu of  my bff.  I dont know the name of his recipe (and so is he lolz).. It's some kind of his kitchen experiment and turned out delicious. Its great to have him shared the recipe, and  for some time I get the chance to do it...... and the amateur kitchen cook strikes again! haha. Because it doesn't have a name, Ive created one for it.. chicken ala kyums.. named it after him since he was the one who created it ( kyum's actually his alias) hehe.

When I tried this at home, my nephews and sister liked it... and on second time,had another chance to try it again at my bro's home.. my niece liked it and also had her 2nd and third servings..  I must say, the dish tastes well and yummy( given me enough guts to continue intruding the kitchen  area ha ha ), so my kitchen adventure goes on. This viand is good for those who no longer have time to prepare or doesn't want additional viands.



Not too presentable but... eatable and palatable ;-p


Ingredients:
  • 3/4 kilo chicken thigh and wings, chopped finely
  • 2 cups tofu ( cut into 1 inch cubes)
  • 3/4 cup chopped celery
  • 3/4 cup onion leaves or leek
  • 3 cloves garlic, minced or chopped finely
  • 1 onion, minced or chopped finely
  • 1-2  tablespoon ginger,cut into julienne strips or chop into fine size
  • 1 tablespoon sugar
  • 2 tbs soy sauce
  • 2 tbs vinegar 
  • 2 tbs cooking oil
  • seasonings to taste
  • 1 cup water or broth
  • oyster sauce ( optional; alternative for soy and sugar)

 Procedures:

  1.  In a medium size stockpot, heat  2 tablespoon oil over medium-high heat. Add garlic, then onion; followed by ginger. stir and cook for a minute.  
  2. Add chicken and saute. Add water or chicken broth; let stand until chicken is partially cooked and the broth almost half the cup. Add soy sauce, vinegar and sugar;let stand until chicken is tender and until the sauce has thickened .Add tofu cubes;simmer for 5 mins. Add celery and onion leaves. simmer. add seasonings to taste. Serve with hot  rice. enjoy.

Beef and Broccoli DIY

Yeah, you read it right. Beef and Broccoli DIY--Why, do-it-yourself  because  some are not really a cook by profession --like me... but have the heart and the guts to try the kitchen and  see if I could cook my favorite meal. yay

 I thought of adding another recipe that  makes me drool whenever my bro cook it. So I asked for his recipe and try my "culinary expertise" lolz. Hope to share another yummy easy to cook recipe to amateur cooks or let's say to beginners like me and experts who wants to try my....ahem my bro's  recipe of beef and brocolli.

My Beef and Broccoli.... DIY


Ingredients:
1k Beef cut into thin strips
 1 medium or large Size brocolli cut cut into serving size
1/4 button mushroom cut into pieces
 butter
1 medium size onion, chopped
1 tsp garlic
1 tablespoon cornstarch into a  cup of water
1/4 cup  Oyster sauce
salt
pepper
1 tablespoonCanola oil
seasoning
1 tsp sugar

How to Cook:
*Pressure cook the beef or boil until tender; remove from pot, save  soup
*steam the broccoli and put into a bowl of water with ice ( to preserve color and freshness)
*In a bowl or pot ( with the beef soup), combine oyster sauce, pepper,salt, sugar

1. In a saucepan,heat canola  oil .saute garlic and onion.mushroom.Add  butter
2. add the beef strips. saute.simmer for a minute
3.Pour the beef soup with the spices or flavors.Add the dissolved cornstarch.Stir until the sauce thickens.
4.Add seasoning to taste, and add in the broccoli.
5.Remove from heat. Serve with rice. enjoy.

Adobong Labong ( bamboo shoot adobo)

There are times that when we see foods not familiar to us, we tend to ask the cook about the taste or just  taste it and see if it is yummy enough to try it. The food I'm about to share is my nanay's recipe..I asked her if I could try it and see if it will pass her taste.

 Maybe it is already familiar to some but to those who doesn't eat "bamboo", (lol)... they might say yaiiks..! Hey, its worth a try. Bamboo shoot is already used  in menus... for dinengdeng, achara and ginataan.here's another recipe.

Ingredients:

1 kilo bamboo shoot/ labong (cut into strips)
1/2 pork ( cut into size you want)
1/2 tbsp black pepper
1 large onion,peeled and sliced
2 large onion, peeled and chopped
half cup soy sauce
half cup vinegar
2 tbsp sugar
2 tsp canola oil

Instructions:.
1) Boil bamboo shoot until tender.drain and compress afterwards.
2)combine onion, garlic,soy sauce,vinegar, sugar, and pepper. pour into drained shoots
3) Heat large wok/pan and add oil.saute a garlic, onion and then the pork.cook until pork is tender
4) Add the bamboo shoot.Stir for 4-5 minutes.
5)Add seasonings to taste .
7) Serve warm..match with rice.enjoy!

Tinolang Manok ( Ilokano version)

The "Kitchen Master" at home doesn't feel like moving around the kitchen, and because of my insistence, found myself  at the kitchen-- again  ( after a few month/s--lol)and in charge of the menu for the day (yeah).
This recipe is the tinola of ilokanos.

 Ingredients:
1 kilo Chicken (cut into preferred size)
1/4 Gizzard ( cut into serving size)
1/4 Chicken feet
half ginger (crushed or chopped)
Fish sauce
1 whole Papaya ( cut into serving size)
3 cups malunggay(moringa leaves)
5 cups water

Instructions:.
1) Boil water with the ginger and let boil for 10  minutes.
2) Add the Fish sauce. Taste.
3) Add the gizzards and chicken feet,let boil and simmer  for 30 minutes  or until gizzards becomes tender.
4) Add the chicken until it becomes tender.
5) Add the papaya and malungay leaves, let it boil and simmer for 2 minutes.
6)Add seasonings to taste if desired.
7) Serve with steamed rice. Share and enjoy!
